Roasted Baby Potatoes

Roasted Baby Potatoes are a flavorful and savory side dish. These oven-roasted baby potatoes are perfect for weeknight dinners and have only a few ingredients!

Ingredients

  • 1 lb (500g) baby potatoes red or yellow
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1/2 teaspoon kosher salt
  • ground black pepper
  • 6 cloves garlic
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the baby potatoes and pat them dry with paper towels. Slice the larger potatoes horizontally.
  3. Transfer the potatoes to an oven-safe skillet (cast iron preferred). Add the olive oil, garlic powder, salt, ground black pepper, garlic, and chopped parsley. Stir to combine well.
  4. Transfer the skillet to the oven and roast for 20 minutes, or until the potatoes are golden brown, tender, and cooked through. Serve immediately.

Notes

  • I used red baby potatoes. You may use any baby potatoes you like.
