Roasted Brown Butter Honey Garlic Carrots

Ingredients

  • 2 pounds large carrots, peeled and cut into 2 inch pieces
  • 1/2 cup butter
  • 3 tablespoons honey
  • 2 garlic cloves, chopped
  • Salt and pepper, to taste
  • Parsley, chopped for garnish

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. In a medium saucepan add the butter and cook over medium-high heat. Continue to whisk for a few minutes until the butter starts to become frothy and brown.
  3. Once the butter is browned, add the honey and garlic and remove from heat.
  4. Peel the large carrots and cut them up into 2-inch pieces. In a large bowl add the carrots and drizzle the sauce on top. Toss until evenly coated and spread onto a large baking sheet in a single layer. Season with salt and pepper.
  5. Cover with foil and bake for 10 minutes. Remove the foil and bake for an additional 5-10 minutes to brown the carrots until they are tender and roasted.
  6. Transfer to a serving dish and garnish with chopped parsley. Serve immediately.
