Ingredients

  • 1 pound Brussels sprouts
  • 2 tablespoons olive oil divided
  • kosher salt pinch
  • 1 pound asparagus

Instructions

    Cup of Yum
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prepare the Brussels sprouts by cleaning them, trimming the stems, and cutting them in half. Toss them with half the olive oil and a pinch of salt for flavor.
  3. Spread the prepared Brussels sprouts on a baking sheet lined with aluminum foil or parchment paper. Roast in the preheated oven for 20 minutes until they start to brown.
  4. While the sprouts are roasting, prepare the asparagus by snapping off the tough ends and cutting the spears into bite-sized pieces. Toss them with the remaining olive oil and salt.
  5. Add the asparagus to the baking sheet with the Brussels sprouts, and continue to roast for an additional 10 minutes until everything is tender and caramelized.
  6. Remove the roasted vegetables from the oven and serve immediately.
