Roasted Brussels Sprouts, White Sweet Potato & Bacon Goal Bowls

How to make Roasted Brussels Sprouts Breakfast Bowls - the vegetables can be roasted ahead of time for a healthy easy breakfast!

Ingredients

  • 1 large white sweet potato peeled and cubed
  • 2-3 cups Brussels sprouts cleaned and cut in half
  • 2 tablespoons olive oil
  • 1-2 teaspoons Parmesan Garlic & Herb Seasoning
  • 4 slices Bacon diced into small pieces
  • 8 large eggs poached
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400 °F.
  2. Toss together the first four ingredients, then place on a large baking sheet.
  3. Roast for 20 minutes, then stir in the bacon.
  4. Roast for another 15-20 minutes, stirring halfway through, until the sweet potatoes are cooked through and the sprouts are done to your liking. ( I like mine crispy!!)
  5. Poach your eggs, then place on top of the roasted white sweet potatoes, and serve. Salt and pepper the eggs to taste and enjoy!
