Ingredients

  • 1 butternut squash
  • 2 tablespoons olive oil
  • 2 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and de-seed the butternut squash, then cut into 1" cubes.
  3. Toss the squash with the oil, garlic, salt, and pepper.
  4. Place onto baking sheet and bake for 28-30 minutes.
