Ingredients

  • 2 pounds carrots , peeled and sliced into 1/4-inch thick ‘fries’
  • 3 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  1. Preheat oven to 425 degrees.
  2. Toss the carrots, oil, salt, and pepper and place in a single layer on a baking sheet.
  3. Roast for 20 minutes.
  4. Flip carrots, roast 10 more minutes until crispy.
