Ingredients

  • 2 pounds carrots peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 1/2 tablespoons parsley chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the carrots with olive oil, salt, pepper, garlic powder, and oregano in a large bowl.
  3. Line a baking sheet with parchment paper. Spread the carrots in a single layer on the sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through. Top with chopped parsley when serving.
