Roasted Corn and Chickpea Salad
Smokey grilled corn takes this chickpea salad from great to spectacular and the homemade dressing is only 5 ingredients!
Ingredients
- one ounce can chickpeas drained
- 2 cups corn or canned drained corn, grilled
- 1 cup cucumber diced
- 3 tablespoons cilantro chopped
Dressing Ingredients
- 2 tablespoons olive oil
- 1 1/2 tablespoons lime juice
- 1 tablespoon honey melted
- 3 teaspoons Tex-Mex seasoning
- 1 teaspoon lime zest
- salt to taste
- black pepper to taste
Instructions
- Combine the salad ingredient and set aside.
- Place the dressing ingredients into a small jar, cover and shake to mix or combine in a bowl.
- Pour over the salad, tossing to coat the salad evenly and serve.
