Ingredients

  • 1 head cauliflower cut into florets, stem removed
  • 2 tablespoons coconut oil (melted)
  • 1 tablespoon curry powder
  • 1 tablespoon Turmeric ground
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • cilantro garnish, fresh

Instructions

  1. Pre-heat oven to 450 degrees.
  2. In a large bowl, whisk together melted coconut oil with spices (curry powder through cayenne.)
  3. Add cauliflower to the bowl and toss with coconut oil and spices until florets are evenly coated.
  4. Spread cauliflower in an even layer on a large baking sheet and roast until lightly browned, about 15-20 minutes.
  5. Serve with freshly minced cilantro.
