Roasted Garlic & Black Pepper Grilled Pork Kabobs
These grilled pork kabobs feature chunks of roasted garlic & herb-flavored pork tenderloin threaded alongside colorful bell peppers, zucchini, red onion, and fresh pineapple. Grilling over direct heat creates caramelized edges on the meat and vegetables, combining savory and sweet notes with slight smoky char, resulting in juicy, tender kabobs suitable for a main dish.
Ingredients
- 1 package pork tenderloin cut into chunks, Smithfield brand, roasted garlic & herb flavor
- 1/2 red bell pepper cut into chunks
- 1/2 yellow bell pepper cut into chunks
- 1 zucchini cut into chunks
- 1/2 red onion cut into chunks
- 1 cup pineapple cut into chunks, fresh
Instructions
- If using wood skewers, soak for an hour or two before beginning.
- Thread pork and vegetables/fruit onto skewers.
- Prepare the grill for direct heat.
- Grill kabobs, turning occasionally until meat is cooked, and vegetables tender. (I cook my tenderloin to 140-145F - use a meat thermometer to check!)
- Serve immediately.
- Devour.
