Roasted Garlic & Black Pepper Grilled Pork Kabobs
Description
The recipe uses pre-flavored pork tenderloin cut into chunks, providing a roasted garlic and herb seasoning base. Vegetables including red and yellow bell peppers, zucchini, red onion, plus pineapple pieces are cut into similar-sized chunks for even grilling. The assembled kabobs are cooked over direct heat on a grill, turning to ensure the pork is cooked through (recommended 140-145°F internal temperature) and vegetables are tender with browned edges.
The grilling imparts a slight char and concentrated flavor, while the pineapple adds sweetness that complements the savory pork and smoky vegetable flavors. These kabobs can be served immediately as a complete meal or paired with sides.
Soaking wooden skewers beforehand prevents burning during cooking. Using a meat thermometer is recommended for accurate doneness. The recipe encourages serving fresh from the grill to enjoy optimal juiciness and texture.
