  • 1/2 yellow bell pepper cut into chunks
  • 1 zucchini cut into chunks
  • 1/2 red onion cut into chunks
  • 1 cup pineapple cut into chunks, fresh

Instructions

  1. If using wood skewers, soak for an hour or two before beginning.
  2. Thread pork and vegetables/fruit onto skewers.
  3. Prepare the grill for direct heat.
  4. Grill kabobs, turning occasionally until meat is cooked, and vegetables tender. (I cook my tenderloin to 140-145F - use a meat thermometer to check!)
