Roasted Garlic Couscous with Tomatoes, Dill, Onion, and Spinach

Ingredients

  • 1 tsp of olive oil
  • 1 box of Roasted Garlic couscous prepared per instructions (use broth to cook for more flavor)
  • ¼ cup of grape tomatoes diced
  • 2 tbsp red onion diced ***soak in ice water for 10 minutes if they are too strong in flavor
  • 2 tbsp baby spinach chopped
  • 1 tbsp fresh dill chopped
  • Sea Salt and Freshly Cracked Pepper to taste

Instructions

  1. Heat a small saucepan over medium heat. Add 1 tsp of olive oil, then add the couscous. Cook, stirring often, for 2 minutes or until couscous is starting to get golden brown.  
  2. Add the water or broth, then prepare the couscous per instructions.  Side Note: If you want the couscous to be more flavorful, use chicken broth instead of water.
  3. Once the couscous has finished cooking, fluff it with a fork, then toss in the tomatoes, red onion, spinach, and dill.  Season with sea salt and freshly cracked pepper, to taste.  
  4. Stir until well combined.  Serve immediately.  Enjoy.
