Ingredients

  • Greek seasoning blend, to taste
  • Sea salt and freshly cracked pepper, to taste
  • 5 chicken thighs, bone-in and skin-on
  • 1 tbsp olive oil

Instructions

    Cup of Yum
  1. Make the Greek seasoning blend.
  2. Season both sides of the chicken thighs with the seasoning blend, to taste. Season both sides with a bit of sea salt and freshly cracked pepper, to taste. Side Note: If time permits, season the chicken and place it on a plate in the refrigerator uncovered for a few hours before cooking. Remove the chicken from the refrigerator 30 minutes prior to cooking.
  3. Preheat the oven to 400 degrees.
  4. Heat 1 tablespoon of olive oil (or butter) in a cast iron skillet over medium-high heat.
  5. Place directly into the HOT skillet skin side down, and cook for 4 minutes, or until the skin is golden brown and flips easily.
  6. Flip the chicken over and place it into the preheated oven. Roast in the oven for 20-25 minutes, or until the chicken is golden brown and cooked through.
  7. Remove from the oven and use tongs to remove the chicken from the skillet to a serving plate. Serve the chicken thighs with fresh lemon on the side. Serve immediately. Enjoy.
