Roasted Green Beans

These roasted green beans are an easy, delicious side dish! Season them simply with olive oil, salt, and pepper, or dress them up with fresh lemon juice, garlic, toasted almonds, and/or Parmesan cheese. Find more seasoning suggestions in the blog post above.

Ingredients

  • 1 pound fresh green beans trimmed
  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon sea salt plus more to taste
  • freshly ground black pepper
Optional toppings
  • ½ teaspoon fresh lemon juice
  • 1 garlic clove grated, optional
  • grated Parmesan cheese
  • toasted sliced almonds
  • lemon zest

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. Divide the green beans evenly between the baking sheets. Drizzle with the olive oil and sprinkle with the salt and several grinds of pepper. Toss to coat and spread evenly on the baking sheets. Roast for 14 to 16 minutes, or until tender and browned in places.
  3. Drizzle with the lemon juice, if using, and toss to coat. Season to taste, tossing with the grated garlic, if using.
  4. Transfer to a serving dish. Top with grated Parmesan cheese, toasted sliced almonds, and/or lemon zest, if desired.
