Ingredients

  • 2 Tablespoons oil
  • 1 ½ pounds pork butt or shoulder cut into small chunks
  • salt and pepper
  • 1 tablespoon minced garlic 
  • 1 cup chopped H-E-B in-store freshly Roasted Hatch Green Chilies
  • 1 medium onion sliced
  • 1 tablespoon minced garlic 
  • 1 14- ounce can diced tomatoes drained
  • 1-1/2 cups chicken broth

Instructions

  1. In a large, deep skillet, or Dutch oven over medium-high heat, cook the pork cubes for about 10 minutes. Add the onion and a sprinkle of salt and cook, stirring occasionally, until it softens slightly, 4 to 5 minutes.
  2. Add the diced Roasted Hatch Green Chiles.
  3. Add the garlic, tomatoes, and chicken broth, not quite enough to cover the mixture. Bring to a boil, and let it boil vigorously for 2 to 3 minutes. Reduce to simmer and cover. Cook for about 5 minutes more. Serve with warm flour tortillas or over rice.
