Ingredients

  • 1 koginut squash about 2.5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet pan with a Silpat liner or parchment paper.
  2. Cut your koginut squash in half, scoop out the pulp and seeds, and then cut each half in half.
  3. Drizzle the inside flesh with the olive oil and sprinkle with kosher salt and black pepper.
  4. Add to the preheated oven and roast for about 45 minutes or until the inside flesh is fork-tender and soft.
  5. Serve as a side dish or use in a salad or soup.
