Roasted Mustard Cauliflower

This easy vegetable side dish is full of flavor and goes well with any meal. Kids and adults love this one!

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 cloves garlic minced
  • 1 head of cauliflower outer leaves removed and discarded, cut into bite-sized florets
  • kosher salt and black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, whole grain mustard, and minced garlic. Add the cauliflower florets to the bowl and toss until the cauliflower is well coated.
  3. Place the cauliflower on a large baking sheet. Season with salt and black pepper, to taste. Roast for 25-30 minutes, stirring once, or until the cauliflower is crispy and browned on the edges.
  4. Remove from the oven and serve warm.
