Roasted onions are so versatile and add flavor to so many dishes. Balsamic vinegar, butter, and some heat from the oven will make these onions crispy and caramelized.

Ingredients
- 2 large sweet onions 1 ½ -2 pounds
- 2 tablespoons melted butter
- 1 teaspoon balsamic vinegar
- 3 tablespoons water or broth
- ⅛ teaspoon kosher salt or to taste
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400°F.
- Whisk melted butter and balsamic vinegar.
- Peel the onions and cut into ½" slices, do not separate the rings.
- Place the onions in a greased 9x13 baking dish and brush with the butter mixture. It's ok if they overlap a little bit.
- Pour the water into the casserole dish.
- Season with salt and pepper and roast 40-50 minutes or until golden and tender.

Notes
- Depending on the preference, the material of the baking dish, and the type of onion, cooking can vary. I prefer a ceramic or glass dish and love the little crispy edges.
- Check the onions early and roast to your preference.
- Leftover roasted onions can be kept in the fridge in a covered container for up to 5 days. They make a great addition to gravy, soup or stew.
