Roasted Onions

Roasted onions are so versatile and add flavor to so many dishes. Balsamic vinegar, butter, and some heat from the oven will make these onions crispy and caramelized.

Ingredients

  • 2 large sweet onions 1 ½ -2 pounds
  • 2 tablespoons melted butter
  • 1 teaspoon balsamic vinegar
  • 3 tablespoons water or broth
  • ⅛ teaspoon kosher salt or to taste
  • ⅛ teaspoon black pepper

Instructions

    Cup of Yum
  1. Preheat the oven to 400°F.
  2. Whisk melted butter and balsamic vinegar.
  3. Peel the onions and cut into ½" slices, do not separate the rings.
  4. Place the onions in a greased 9x13 baking dish and brush with the butter mixture. It's ok if they overlap a little bit.
  5. Pour the water into the casserole dish.
  6. Season with salt and pepper and roast 40-50 minutes or until golden and tender.

Notes

  • Depending on the preference, the material of the baking dish, and the type of onion, cooking can vary. I prefer a ceramic or glass dish and love the little crispy edges.
  • Check the onions early and roast to your preference.
  • Leftover roasted onions can be kept in the fridge in a covered container for up to 5 days. They make a great addition to gravy, soup or stew.
