Ingredients

  • 2 pounds parsnip
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons thyme minced, fresh
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper coarse ground

Instructions

  1. Preheat oven to 400 degrees.
  2. Trim the tops of parsnips and peel with a peeler.
  3. Cut the parsnips into 1-inch chunks, cutting thinner as is gets wider.
  4. Add the parsnips, olive oil, thyme, salt, and pepper to the bowl, mixing well.
  5. Place the parsnips on a large sheet pan in a single layer.
  6. Cook for 20 minutes.
  7. Stir and cook for up to an additional 20-25 minutes until parsnips are roasted and soft.
  8. Toss with a drizzle extra olive oil if desired when serving.
