Roasted Pepitas
Roasted Pepitas are pumpkin seeds tossed with maple syrup, cinnamon, salt, and cayenne pepper then baked until crisp. This roasting method enhances their natural nuttiness and adds a balance of sweetness, warmth from cinnamon, and a mild hint of heat from cayenne.
Ingredients
- 1 1/2 cups pumpkin seeds pepitas, raw, shelled
- 1 tablespoon pure maple syrup
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- pinch cayenne pepper
Instructions
- Preheat oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss all of the ingredients together until combined. Spread seeds on baking sheet in an even layer. Roast in oven for 6 minutes, tossing once half way through. Let cool completely and store in an airtight container.
Notes
- This recipe yields about 1 1/2 cups of roasted pepitas.
- Use raw shelled pumpkin seeds for the recommended nutritional profile, but standard pumpkin seeds with shells can be used with possible flavor differences.
- Maple syrup can be substituted with honey, though the flavor will be affected.
- Spices are optional but contribute significantly to the taste.
- Store roasted pepitas in an airtight container for up to two weeks to maintain freshness.
