Roasted Pepitas

Report
Roasted Pepitas are pumpkin seeds tossed with maple syrup, cinnamon, salt, and cayenne pepper then baked until crisp. This roasting method enhances their natural nuttiness and adds a balance of sweetness, warmth from cinnamon, and a mild hint of heat from cayenne.

Description

This recipe uses raw, shelled pumpkin seeds coated evenly with pure maple syrup and a mixture of ground cinnamon, salt, and cayenne pepper. The seeds are spread on a parchment-lined baking sheet and roasted in a 400°F oven for six minutes, stirring halfway through to ensure even roasting. Once cooled, they develop a crunchy texture combined with a sweet-spicy flavor profile.

These roasted pepitas serve well as a snack on their own or as a crunchy topping for salads, yogurt, or oatmeal, adding both texture and dimension to dishes.

The prepared pepitas are best stored in an airtight container and remain fresh for up to two weeks. Substitutions like honey for maple syrup or omitting spices can alter taste but remain effective. Nutritional information is calculated per half cup serving.

  • Use raw shelled pumpkin seeds for the recommended nutritional profile, but standard pumpkin seeds with shells can be used with possible flavor differences.
  • Maple syrup can be substituted with honey, though the flavor will be affected.
  • Spices are optional but contribute significantly to the taste.
  • Store roasted pepitas in an airtight container for up to two weeks to maintain freshness.
