Roasted Pork Loin

Ingredients

  • 4-5 pound pork loin roast, trimmed of fat
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 1 cup chicken stock
Gravy
  • 1 cup chicken broth
  • 3 tablespoons flour

Instructions

  1. Preheat oven to 350°F.
  2. Pat pork loin dry with a paper towel.
  3. In a small bowl combine 1 tablespoon olive oil, garlic powder, onion powder, salt, and pepper. Rub mixture on all sides of the pork loin.
  4. In a large skillet, over medium heat, add remaining 1 tablespoon of olive oil. Once heated, sear pork loin on all sides until browned (about 4 minutes per side).
  5. Add chicken broth to skillet, cover with foil and transfer the pan to the oven for 15 minutes.
  6. Remove the foil and baste the pork loin in the pan juices. Bake uncovered for another 20-25 minutes (or until the pork reaches an internal temperature of 145°F).
  7. Remove the skillet from the oven and transfer the pork loin to a plate while you make the gravy.
Gravy
  1. In a medium bowl, whisk together broth and flour until no lumps appear.
  2. Pour into the skillet with the pan drippings.
  3. Set the skillet to medium heat and whisk to combine. The mixture will thicken. Once the desired thickness is reached, remove from heat.
  4. Slice the pork loin and drizzle gravy over the top. Serve immediately.
