Roasted Pork Sandwich with Horseradish Sauce

Creamy yogurt horseradish sauce is the perfect sandwich topping for leftover pork, chicken or beef.

Ingredients

  • 1 whole wheat pita
  • ½ c baby spinach (arugula would be great too)
  • 2-3 oz leftover pork roast (or chicken or beef)
  • ¼ c plain low fat yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon horseradish
  • ½ clove garlic (grated)
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Split open pita and fill both halves with equal amounts of baby spinach and leftover pork roast.
  2. In a small bowl, stir together yogurt, lemon juice, horseradish, garlic, salt and pepper.
  3. Drizzle creamy horseradish sauce over the pork or serve along side the sandwich as a dipping sauce.
