Roasted Portobella Mushrooms
This Roasted Portobella Mushroom Sandwich is exquisite. Loaded with flavors from the pesto, roasted red peppers, and feta.
Ingredients
- Portobella Mushroom
- 1 -2 Tablespoons coconut oil or olive oil
- black pepper
- focaccia bread
- basil pesto
- red bell pepper roasted
- red onion slices
- feta cheese or provolone cheese, crumbles
- lettuce
Instructions
- Preheat oven to 425 degrees F
- Wash the mushrooms and brush with melted coconut oil or olive oil.
- Sprinkle with pepper
- Bake for 20-25 minutes.
- Spread 1-2 tablespoons of pesto sauce on the bottom slice of Faccocia bread.
- Top with red onion slices, roasted red peppers, lettuce and feta cheese. If you use provolone cheese, it is fabulous to pop this in the microwave or in a toaster oven and melt the cheese.
