Roasted Sweet Potatoes

These savory, cubed roasted sweet potatoes are easy to make and a crowd favorite. Just dice up some sweet potatoes, season and plop in the oven!

Ingredients

  • 4 large sweet potatoes peeled and cut into 1-inch cubes
  • ¼ cup olive oil
  • 1 tablespoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Add the sweet potatoes to the prepared baking sheet. Drizzle with olive oil and season with paprika, salt and pepper. Toss the sweet potatoes to make sure they are well coated and then arrange in a single layer.
  3. Roast for 30-40 minutes, flipping halfway through, until the sweet potatoes are knife tender.

Notes

  • Tip: Dice your sweet potato cubes as evenly as possible to avoid varying degrees of doneness.
