Ingredients
- 2 pounds sweet potato peeled and cut into 2 inch chunks, washed
- GLAZE:
- 2 tablespoons olive oil
- 4 tablespoons butter melted, unsalted
- 2 tablespoons pure maple syrup or honey
- 3 tablespoons light brown sugar tightly packed
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper as needed, freshly cracked
- GARNISH:
- parsley chopped
Instructions
- Preheat oven to 400 degrees F.
- Line a baking sheet pan with parchment paper and set aside.
- Combine all the GLAZE ingredients in a medium bowl.
- Place sweet potato chunks in a large bowl and pour the glaze on top. Toss to combine.
- Transfer potatoes onto the prepared baking sheet. Arrange in a single layer.
- Roast at 400F for 20 minutes. Use a spatula to turn the cake over and bake for another 10-20 minutes or until tender when pierced with a fork.
- Serve warm, garnished with parsley.
