Roasted Sweet Potatoes and Carrots
Roasted Sweet Potatoes and Carrots combine diced sweet potatoes and sliced carrots tossed with olive oil, a blend of warm spices, and optional brown sugar. Roasting in an air fryer crisps edges while tenderizing the vegetables. The added butter at the end enriches the flavor and texture for a comforting side dish.
Ingredients
- 3 cups sweet potato peeled and diced 1"
- 3 large carrot peeled and sliced
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cinnamon
- ⅛ teaspoon ground ginger
- 1 tablespoon brown sugar optional
- 1 tablespoon butter
Instructions
- Toss all ingredients except butter in a bowl.
- Preheat air fryer to 400°F.
- Place into preheated air fryer. Cook 10 minutes.
- Shake basket and cook an additional 4-7 minutes or until lightly browned and tender.
- Toss with butter and serve.
Notes
- For sweeter flavor, add extra brown sugar when tossing with butter after roasting.
- Leave out brown sugar and cinnamon for a savory version; add thyme or fresh dill after cooking.
- To roast in the oven, bake at 400°F for 35-40 minutes until tender and lightly browned.
