Roasted Sweet Potatoes and Carrots

Roasted Sweet Potatoes and Carrots combine diced sweet potatoes and sliced carrots tossed with olive oil, a blend of warm spices, and optional brown sugar. Roasting in an air fryer crisps edges while tenderizing the vegetables. The added butter at the end enriches the flavor and texture for a comforting side dish.

Description

This recipe roasts peeled, diced sweet potatoes and sliced carrots coated with olive oil, salt, black pepper, cinnamon, ground ginger, and optionally brown sugar. Cooking in an air fryer at 400°F produces lightly browned, tender vegetables with a hint of sweetness and warm spice. The addition of butter after cooking adds richness.

The cinnamon and ground ginger create a subtle warmth that complements the natural sweetness of the root vegetables. The roasting method enhances caramelization on edges without losing the tender texture within. The vegetables remain moist inside while crisping outside.

The dish serves well as a side to various mains or as part of a roasted vegetable mix. Optional brown sugar adjusts sweetness to preference. Fresh herbs like thyme or dill can be added for alternative savory flavors.

If an oven is used instead of an air fryer, roasting at 400°F for 35-40 minutes achieves similar results. Adjust roasting time based on size of vegetable pieces.
