Roasted Sweet Potatoes & Pears

Ingredients

  • 3 sweet potatoes
  • 2 pears
  • 3 shallots
  • 2 Tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 400.
  2. Peel the sweet potatoes and cut them into 1 inch cubes.
  3. Peel and core the pears and cut them into 1 inch cubes.
  4. Dice the shallots finely.
  5. Combine the sweet potatoes, pears, shallots, olive oil, salt, pepper and thyme in a bowl and mix well.
  6. Spread the mixture in a 8 x 20 casserole dish and roast for 25-30 minutes until the vegetables are tender.
