Roasted Tomatoes with Pesto and Parmesan

Ingredients

  • olive oil cooking spray
  • 5 small tomatoes halved
  • freshly cracked black pepper to taste
  • pesto to taste
  • Parmesan Cheese shredded
  • fresh basil chopped

Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment or foil then coat with olive oil cooking spray.
  2. Prepare pesto–click here for the recipe.
  3. Place the tomato halves on the baking sheet then season the tomatoes with freshly cracked black pepper, to taste.
  4. Place a bit of pesto on each tomato half followed by a pinch of shredded Parmesan cheese.
  5. Place into the oven and roast for 10-12 minutes or until the tomatoes are softened and the cheese is melted.
  6. Remove from the oven and add some more Parmesan cheese and a bit of fresh basil to the top of each tomato half. Serve immediately. Enjoy.
