- 12 eggs
- ½ cup whole milk or greek yogurt, 2%, cream, half and half
- ½ teaspoon dried basil
- ¼ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ½ pound asparagus ends trimmed and cut into 1 inch pieces
- 1 pint Cherry or grape tomatoes
- 1 large onion chopped roughly
- 2 handfuls fresh spinach leaves about 3-4 cups
- 2 TBS olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- ¼ cup goat cheese crumbles
