Roasted Zucchini and Squash

If you've never thought of combining zucchini and yellow squash together before, try this side dish that's easy to make and tastes great.

Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon ground black pepper
  • Optional: 1/4 cup grated Parmesan cheese

  1. Preheat the oven to 425°F.
  2. Wash the zucchini and squash, quarter them lengthwise, then cut them into 1-inch thick pieces.
  3. In a bowl, toss zucchini and squash with olive oil, Italian seasoning, garlic powder, salt, and pepper until coated.
  4. Place the seasoned vegetables in a single layer on a large baking sheet covered with parchment paper.
  5. Roast in the preheated oven for 13-18 minutes, or until tender and lightly browned.
  6. If desired, sprinkle grated Parmesan cheese over the vegetables and roast for an additional 2 to 3 minutes until the cheese melts.
  7. Remove from the oven and serve warm.
