Rock Cakes from Harry Potter (Rock Buns)
Description
Rock Cakes from Harry Potter (Rock Buns) combine basic baking ingredients like flour, butter, and sugar, enriched with dried fruit such as currants or golden raisins and accented by a hint of mixed spice. The dough is mixed just until combined to keep the texture crumbly rather than smooth, which creates their signature rock-like appearance. Baking at a high temperature briefly forms a golden crust while keeping the centers tender. The coarse sugar sprinkled on top adds a slight crunch and touch of extra sweetness.
The flavor balance is mildly sweet with the warmth of spice and fruit, and the texture is crumbly and rustic rather than soft or cakey. This baking style invites small, irregular shapes formed with forks to replicate the appearance of rough stones or rocks.
These cakes are ideal as a snack with tea or coffee and can be enjoyed once cooled after baking. Their hearty texture and mild sweetness make them suitable for serving alongside a warm drink in cooler weather or during casual gatherings. The recipe is straightforward and focused on quality ingredients to achieve the characteristic crumb and flavor.
For best results, use quality butter and fresh dried fruit. Avoid overmixing the dough to keep the rugged texture intact. Baking time can vary depending on oven heat, so watch closely to achieve a golden top without overbaking.
Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¾ tick butter
- ⅓ cup sugar
- ½ cup currants or golden raisins (Sultanas)
- 1 egg
- 2 ½ oz milk
- ⅛ tsp mixed spice
Instructions
- Preheat oven to 425°F (215°C).
- Line cookie sheets with silicone baking sheets or parchment paper.
- Sift the flour, baking powder (and mixed spice, if using) and set aside.
- Cream the butter and sugar until creamy and smooth. Add the egg. Next, mix in the sifted flour and milk. As it comes together, add the dried fruit.
- Mix just until combined. Do not over mix.
- With two forks, make "rock-like" cookies on the tray about 2" apart. They should not be smooth.
- Sprinkle with a little sugar and bake in the upper part of the oven for about 12 minutes. (It could range from 10 to 15 minutes, depending on your oven.)
- Remove from tray and place on cooling rack. When cool, enjoy the fruits of your labor.
Notes
- Use quality butter and fresh currants or golden raisins for better flavor and texture.
- Do not overmix the dough to preserve the crumbly, rough texture characteristic of rock cakes.
- Sprinkle sugar on top before baking to add a subtle crunchy sweetness.
- Bake at a high temperature for a short time to develop a golden crust while maintaining moisture inside.
