Rock Cod in Ginger Soy Sauce Marinade
This Rock Cod recipe uses a ginger soy sauce marinade made of honey, soy sauce, rice vinegar, garlic, and fresh ginger to infuse the fish with a balanced sweet, tangy, and savory flavor. The marinated cod is sautéed until golden and served drizzled with reserved marinade, garnished with chopped parsley.
Ingredients
- 2 pounds rock cod
- 1 teaspoon olive oil
For Ginger Soy Sauce Marinate
- ⅓ cup honey
- ½ cup soy sauce
- ½ cup rice vinegar
- 1 garlic clove
- 1 ginger 2 inch piece, fresh
- ½ cup parsley chopped
Instructions
- Make the marinade by combining all the ingredients in a food processor or blender until well blended.
- Season the rock cod generously with salt and pepper on both sides. Pour most of the marinade over the fish, reserve a couple of tablespoons to drizzle over the cooked fish. Marinate from 30 to 1 hour.
- In a large skillet add the olive oil and sauté the fish for 3 minutes per side until golden.
- Drizzle remaining marinade over the fish and garnish with parsley (optional)
