Rocket Salad

Rocket Salad is an easy and versatile 5-minute side salad. Made with fresh rocket (arugula), shaved parmesan and a zingy balsamic dressing.

Ingredients

  • 120 g rocket (arugula)
  • 25 g shaved Parmesan cheese see my notes
Dressing
  • 1½ tablespoons olive oil
  • 3 teaspoons balsamic vinegar see my notes
  • ¼ teaspoon fresh black pepper

Instructions

    Cup of Yum
  1. Combine the dressing ingredients in a small jar.
  2. Put on the lid and shake to mix.
  3. Place rocket and shaved parmesan in a large bowl and toss to combine.
  4. Drizzle over dressing then give a final toss and serve.

Notes

  • *Please note that the amount of calories per serve is provided as a guide only, as ingredients and cooking methods can vary greatly*
  • Use a vegetable peeler to thinly shave the parmesan.
  • If you are substituting balsamic glaze for the balsamic vinegar, you only need about half the amount.
