Rocket Salad is an easy and versatile 5-minute side salad. Made with fresh rocket (arugula), shaved parmesan and a zingy balsamic dressing.

Ingredients
- 120 g rocket (arugula)
- 25 g shaved Parmesan cheese see my notes
Dressing
- 1½ tablespoons olive oil
- 3 teaspoons balsamic vinegar see my notes
- ¼ teaspoon fresh black pepper
Instructions
- Combine the dressing ingredients in a small jar.
- Put on the lid and shake to mix.
- Place rocket and shaved parmesan in a large bowl and toss to combine.
- Drizzle over dressing then give a final toss and serve.
