Rocket Salad

Rocket Salad features fresh arugula tossed simply with extra virgin olive oil and cracked black pepper, topped with shaved Parmesan cheese and finished with a drizzle of balsamic glaze. This salad combines peppery greens, creamy cheese, and a sweet tangy glaze for a refreshing side dish or starter that highlights the natural flavors of each ingredient.

Ingredients

  • 4 cups arugula also known as rocket
  • 1½ tablespoons extra virgin olive oil
  • ½ teaspoon black pepper freshly cracked
  • ¼ cup Parmesan Cheese shaved
  • 2 teaspoons balsamic glaze

Instructions

    Cup of Yum
  1. Place rocket/arugula in a bowl, drizzle with the olive oil, sprinkle over the black pepper, then toss it to coat the leaves.
  2. Transfer to a serving dish.
  3. Use a potato peeler to shave over the parmesan cheese.
  4. Drizzle the salad with the balsamic glaze and serve immediately.
