Rocky Road Brownies

Rich, decadent chocolate brownies topped with marshmallows, chocolate chips, and walnuts.

Ingredients

  • 1 cup butter (softened)
  • 2 cups sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/2 cup cake flour (if you don't have cake flour, you can still use all-purpose flour)
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips
Rocky Road Topping:
  • 1 10-ounce pkg. mini marshmallows
  • 1 cup semi-sweet chocolate chips (may use more if you want it extra decadent)
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla.
  2. Stir in flour, cake flour, cocoa, and salt until mixed together. Fold in chocolate chips. 
  3. Pour into 9 x 13 pan and spread evenly. Bake for 28-32 minutes. Remove from the oven and sprinkle marshmallows, chocolate chips, and walnuts evenly all over the top. Return to oven and bake for 5 minutes longer, or until the marshmallows are soft and begin to melt.  
  4. Let sit for 10 minutes before cutting. For easier cutting, place in the freezer for 15 minutes.  Also, dip a sharp knife into hot water before slicing.
