Ingredients
- 9 oz strawberries , hulled
- 9 oz raspberries
- 9 oz redcurrants
- 9 oz blackcurrants
- 9 oz blueberries
- 1¼ cup caster sugar
- 1½ tablespoons Potato Starch
- 1 teaspoon vanilla extract (optional)
- ¾ cup water
- 2 tablespoons water
To serve
- 2 tablespoons caster sugar
- 1 cup cream , very cold
Instructions
- Wash all the red fruits, except the raspberries, and place them into a saucepan.
- Add the water and sugar, and mix well.
- Bring to a boil over a high heat, then immediately reduce the heat to its lowest setting, add the vanilla, and simmer for 4 minutes.
- Remove the pan from the heat, and gently fold in the raspberries so that they remain as whole as possible.
- In a bowl, slake the potato starch in 2 tablespoons of water, stir into the berry mixture.
- Remove the pan from the heat just before the mixture reaches boiling point, and stir very gently.
- Divide the mixture into cups, and sprinkle each with caster sugar.
- Chill in the refrigerator for 5 hours.
- Serve with cream or whipped cream.
