Rosemary Balsamic Pork Loin

Ingredients

  • 3-4 lbs boneless pork loin
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 6 prigs fresh Rosemary chopped
  • 6 prigs fresh thyme chopped
  • 2 tbsp steak seasoning
  • 6 cloves garlic crushed
  • 6-8 lices Bacon

Instructions

  1. Pre-heat the oven to 400°F.
  2. In a small bowl, combine the balsamic vinegar, olive oil, fresh rosemary, fresh thyme, steak seasoning and garlic.
  3. Rub this mixture on the pork loin, making sure to cover both sides evenly.
  4. Wrap each slice of bacon around the pork loin.
  5. Place on a wire rack on top of a foil lined baking sheet. 
  6. Cover with foil and place in the oven to roast for 20 minutes.
  7. Uncover the pork and continue cooking for an additional 25 minutes.
  8. The pork will register at 145°F when ready.

Notes

  • This pork loin recipe is perfect for those on the keto diet, as it's only 2 carbs per serving.
  • One serving equals 1/2 lb of pork loin.
