Rosemary Berry Baked Brie
Rosemary Berry Baked Brie features a wheel of Brie cheese baked gently to maintain its shape, topped with a mixture of blackberries and blueberries coated in brown sugar, coconut oil, and finely chopped fresh rosemary. The baking process softens the cheese while creating a glossy, fragrant berry topping that pairs the creamy, mild Brie with bright, earthy flavors. Served warm, it complements crackers, bread, and fruit snacks.
Ingredients
- 1 .2 oz Brie cheese round
- 1 tablespoon brown sugar
- 6 ounces blackberry
- 6 ounces blueberries
- 3 tablespoons coconut oil
- 1 teaspoon rosemary finely chopped, fresh

- rosemary extra, for garnish
Instructions
- Preheat oven to 350F.
- Place parchment paper into a baking dish, and add the brie wheel on top.
- Do NOT cut the top off of the brie round, you need the brie to hold its shape for this recipe. Set baking dish aside.
- Add the berries to a small sized baking dish (a pie dish works fine), sprinkle the berries with sugar and coat in coconut oil, sprinkle with rosemary and gently mix everything to make sure all the berries are covered in coconut oil and sugar.
- Transfer the cheese and the berries into the preheated oven and bake for 15-20 minutes.
- Remove baking dishes from oven, gently transfer baked brie to a serving plate, spoon the berry mixture on top of the baked brie, garnish with fresh rosemary.
- Serve immediately with crackers, sliced apples, fresh warm bread, or banana chips.
