Description

In this recipe, a whole Brie round is placed on parchment paper in a baking dish without cutting the rind, ensuring the cheese keeps its shape during baking. Separately, fresh blackberries and blueberries are tossed with brown sugar, coconut oil, and finely chopped rosemary to coat them fully.

The Brie and berry mixture bake together at 350°F (175°C) for 15-20 minutes until the berries are softened and syrupy, and the Brie becomes soft inside without losing its round form. Garnished with additional rosemary, the baked Brie is served immediately, topped with the warm, sweet, herbal berry compote.

This dish offers a balance of creamy, mild cheese and fragrant, sweet-tart berry topping with herbal notes from rosemary. It pairs well with crackers, sliced apples, fresh bread, or banana chips, making it suitable as an appetizer or snack for gatherings.

  • 1 .2 oz Brie cheese round
  • 1 tablespoon brown sugar
  • 6 ounces blackberry
  • 6 ounces blueberries
  • 3 tablespoons coconut oil
  • 1 teaspoon rosemary finely chopped, fresh

Optional:

  • rosemary extra, for garnish

Instructions

  1. Preheat oven to 350F.
  2. Place parchment paper into a baking dish, and add the brie wheel on top.
  3. Do NOT cut the top off of the brie round, you need the brie to hold its shape for this recipe. Set baking dish aside.
  4. Add the berries to a small sized baking dish (a pie dish works fine), sprinkle the berries with sugar and coat in coconut oil, sprinkle with rosemary and gently mix everything to make sure all the berries are covered in coconut oil and sugar.
  5. Transfer the cheese and the berries into the preheated oven and bake for 15-20 minutes.
  6. Remove baking dishes from oven, gently transfer baked brie to a serving plate, spoon the berry mixture on top of the baked brie, garnish with fresh rosemary.
  7. Serve immediately with crackers, sliced apples, fresh warm bread, or banana chips.
