Ingredients

  • 1 tablespoon dry yeast
  • 1 tablespoon sugar
  • 1 cup warm water
  • 2 1/2 cups white flour
  • 1 teaspoon salt
  • 2 teaspoon olive oil
  • 2 tablespoon butter
  • 1/4 cup fresh Rosemary chopped
  • 2 tablespoons grated Parmesan cheese
  • nonstick cooking spray

Instructions

  1. Place yeast, sugar, and water in a large bowl and allow the mixture to become bubbly.
  2. Mix in 2 cups of flour and salt. Knead for 10 minutes, adding more flour if needed to make a smooth, elastic dough.
  3. Oil a bowl, put the dough in the bowl, and turn to coat all sides.
  4. Cover with a towel. Let dough rise in a warm place for 1 hour, until doubled.
  5. Punch down the dough and divide it in half.
  6. Let the dough rest for a few minutes.
  7. Coat 2 9-in square cake pans with nonstick spray.
  8. Press dough into pans. Melt butter. Brush butter over the tops of the loaves.
  9. Sprinkle rosemary over the loaves and lightly press into the surface.
  10. Let the loaves rise again until doubled, about 45 min.
  11. Preheat oven to 450 F.
  12. Sprinkle parmesan over the tops.
  13. Bake for 20 – 25 min, until lightly browned.
