Rosolli (Finish Beet Herring Salad)
Rosolli is a Finnish salad combining diced cooked potatoes, apples, carrots, beets, pickles, onions, and pickled herring, dressed with a creamy, tangy sour cream mixture enhanced with beet juice for color. The mix provides a blend of sweet, earthy, and briny flavors with contrasting textures, served chilled as a refreshing accompaniment or side dish.
Ingredients
- 2 potato cooked, peeled and diced, medium
- 2 apple peeled and diced, Granny Smith variety
- 2 carrot cooked, peeled and diced
- 2 cups beet cooked, peeled and diced
- 1 onion minced, medium
- 2 dill pickles diced, medium
- 3/4 cup pickled herring or sardines
- 1/8 tsp black pepper
- 1 tsp dill chopped
Sour cream dressing:
- 1 cup sour cream or heavy cream
- 1 tbsp lemon juice or to taste
- 2 tsp beet juice
- sugar to taste
- salt to taste
Instructions
- In a large enough bowl combine the diced potatoes, apples, carrots, onion, dill pickles and herring. Sprinkle on the pepper and dill and combine to evenly distribute the ingredients.
- Reserve the diced beets to toss them in just before serving.
- Prepare the dressing in a separate bowl by combining all the ingredients and mixing until homogenous.
- Now either add it to the salad and toss to coat everything in the dressing. Alternatively, you can serve the dressing on the side so everyone can add as much as they like to their serving.
- Keep chilled in the refrigerator. When it's time to serve, add the beet and toss gently. Then, transfer to a serving bowl on a bed or fresh lettuce.
- Serve and enjoy with your favorite main dish!
