Ingredients
- 4 cups shredded rotisserie chicken (415g)
- 6 strips of bacon cooked & crumbled*
- 1.5 cups diced celery (180g)
- 1/2 cup light mayo (120g)
- 1/2 cup cottage cheese (113g)
- 1/2 cup quartered cherry tomatoes (180g)
- 1/2 tsp black pepper
Instructions
- In a large bowl, add the rotisserie chicken, bacon, celery, mayo, cottage cheese and black pepper and mix until combined. Taste and add any salt or pepper to your preference. Then mix in the tomatoes until evenly combined.
- Enjoy in a sandwich, lettuce wrap, with crackers, or as is! Keep stored in an airtight container in the fridge for 4-5 days.
