Rotisserie Chicken Greek Bowls
No time for cooking? Make these healthy rotisserie chicken bowls fast, and forget about take-out.
Ingredients
For the rice:
- 1 cup white rice
- 2 cups water
- ½ teaspoon salt optional
For the bowls:
- 4 cups chicken meat diced, rotisserie
- 1 pint cherry tomato halved
- 1 cucumber coarsely chopped, seedless
- ½ cup kalamata olives
- ½ red onion sliced
- tzatziki sauce
- ¼ cup feta cheese crumbled
- lemon for serving, wedges
Instructions
Prep:
- Cook the rice according to the package directions.
- While the rice cooks, chop or shred rotisserie chicken and slice the veggies.
Assemble:
- In a bowl, make a base of rice. Top with rotisserie chicken, tomatoes, cucumber slices, olives, red onion, tzatziki sauce, and feta cheese. Serve with lemon wedges.
