Ingredients

Servings

For the rice:

  • 1 cup white rice
  • 2 cups water
  • ½ teaspoon salt optional

For the bowls:

  • 4 cups chicken meat diced, rotisserie
  • 1 pint cherry tomato halved
  • 1 cucumber coarsely chopped, seedless
  • ½ cup kalamata olives
  • ½ red onion sliced
  • tzatziki sauce
  • ¼ cup feta cheese crumbled
  • lemon for serving, wedges

Instructions

Prep:

  1. Cook the rice according to the package directions.
  2. While the rice cooks, chop or shred rotisserie chicken and slice the veggies.

Assemble:

  1. In a bowl, make a base of rice. Top with rotisserie chicken, tomatoes, cucumber slices, olives, red onion, tzatziki sauce, and feta cheese. Serve with lemon wedges.
