Ingredients

  • 10 ounces rotisserie chicken shredded
  • 64 ounces chicken broth
  • 16 ounces water
  • 4 chicken bouillon cubes
  • 12 ounces carrots peeled and sliced into rounds
  • 8 ounces celery sliced
  • 8 ounces onion diced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 20 ounces cheese tortellini refrigerated not frozen for best results
  • 1 lemon

Instructions

  1. In a large stock pot add chicken broth, chicken bouillon cubes, shredded chicken, water, carrots, celery, onion, salt, and pepper. Bring to a boil then reduce to medium low heat and cook for 35 minutes or until carrots have softened.
  2. After 35 minutes add cheese tortellini and cook for 5 minutes or until the tortellini is cooked through.
  3. Cut your lemon in half and squeeze the juice into the soup. Stir together and serve.
