Ingredients
- 1/2 cup pistachios chopped
- 1/2 cup freeze-dried raspberries lightly crushed
- 10 tablespoons unsalted butter softened
- 1 cup brown sugar dark or light
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cup flour
- 1/4 cup dark chocolate cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup ruby chocolate chips plus 1/4 cup extra to decorate
Instructions
- Preheat the oven to 375 degrees F.
- Chop the pistachios. Put the freeze-dried raspberries on a cutting board and use the flat side of a large knife to crush them.
- Combine the butter and brown sugar in the bowl of a mixer. Beat on medium speed until creamy and fluffy.
- Add the egg and vanilla and mix well.
- Mix flour, cocoa powder, baking soda, and salt in a medium bowl.
- Add the flour mixture to the mixing bowl and beat on low speed until just combined.
- Stir in the ruby chocolate chips, pistachios, and raspberries.
- Roll the dough into 1 1/2 to 2-inch balls. Place the balls on parchment-lined baking sheets. Leave about 2 inches in between the cookies.
- Bake in the preheated oven for 12 minutes until the edges are set. Take the cookies out of the oven and, if desired, place 3-4 chips on top of the cookies. Let them cool on the baking sheets for 10 minutes, then remove to wire racks.
Cup of Yum
Notes
- The pink color of the chips will fade as they bake. So reserve some to place on top of the cookies after baking for a fantastic look.
- You can dice a few ruby chocolate bars instead of using the chips.
- Don't overbake the cookies - underbaking gives them a softer, chewier texture in the middle.
- Use white or dark chocolate chips if you can't find ruby chocolate.
