Saag Paneer
Saag Paneer combines finely cooked spinach with warm spices and cubes of browned paneer cheese in a creamy coconut milk sauce. The dish offers tender, rich spinach seasoned with cumin, garam masala, turmeric, and a hint of cayenne for gentle heat. The coconut milk adds creaminess, balancing the spices and making a thick, luscious sauce that coats the golden paneer pieces well.
Ingredients
- 1 pound spinach chopped
- 2 teaspoons fenugreek dried
- 4 tablespoons ghee if not available use butter
- 12 ounces paneer cut into small 1/2" cubes
- 1 yellow onion chopped
- 2 cloves garlic minced
- 1 teaspoon ginger minced, fresh
- 2 teaspoons cumin
- 2 teaspoons garam masala
- 1/2 teaspoon Turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon kosher salt
- 1 1/2 cups coconut milk
Instructions
- Add the spinach and fenugreek to boiling water and cook for 2-3 minutes.
- Drain well, squeezing out as much liquid as possible before chopping the spinach finely.
- Add the ghee to a pan and fry the paneer cubes until lightly browned then remove from pan.
- Add in the onions, garlic and ginger to the ghee and cook on medium heat, stirring and cooking until wilted and translucent.
- Add in the spinach, cumin, garam masala, turmeric, cayenne pepper, kosher salt and coconut milk along with the browned paneer.
- Cook uncovered for 10-15 minutes or until the coconut milk has cooked down resulting in a thick green spinach sauce.
