Saag Paneer
Description
Saag Paneer starts by blanching spinach with fenugreek leaves briefly, then draining and chopping it finely to achieve a soft texture. Paneer cubes are browned in ghee or butter to develop a light crust, adding flavor and texture contrast. Aromatics like onion, garlic, and ginger are cooked in the same fat until translucent, providing a flavored base. Spices including cumin, garam masala, turmeric, cayenne, and salt are added along with coconut milk and paneer, then the mixture simmers uncovered until the sauce thickens and coats the ingredients.
The cooked spinach blends smoothly with the warming spices and creamy coconut milk to create a thick green sauce. The paneer cubes remain distinct but soaked in the sauce, delivering mild cheese richness and chew. This dish is suited as a vegetarian main, typically enjoyed with rice or flatbreads as part of a meal.
Ingredients
- 1 pound spinach chopped
- 2 teaspoons fenugreek dried
- 4 tablespoons ghee if not available use butter
- 12 ounces paneer cut into small 1/2" cubes
- 1 yellow onion chopped
- 2 cloves garlic minced
- 1 teaspoon ginger minced, fresh
- 2 teaspoons cumin
- 2 teaspoons garam masala
- 1/2 teaspoon Turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon kosher salt
- 1 1/2 cups coconut milk
Instructions
- Add the spinach and fenugreek to boiling water and cook for 2-3 minutes.
- Drain well, squeezing out as much liquid as possible before chopping the spinach finely.
- Add the ghee to a pan and fry the paneer cubes until lightly browned then remove from pan.
- Add in the onions, garlic and ginger to the ghee and cook on medium heat, stirring and cooking until wilted and translucent.
- Add in the spinach, cumin, garam masala, turmeric, cayenne pepper, kosher salt and coconut milk along with the browned paneer.
- Cook uncovered for 10-15 minutes or until the coconut milk has cooked down resulting in a thick green spinach sauce.
